Is it just me or don’t you hate it when bananas go to waste, it makes me feel sad. So I’m sure like many of us during these crazy COVID times banana bread has been our go to ‘healthy’ treat (despite how much sugar we all know is add in… let’s be honest brown sugar is still bad!!)
Well, as my girlfriend is kinda enough to come over tomorrow night so I can try out the Dyson styling tool (eeeew beyond excited… and my hair is now going into 4 days without washing… yuck!) and make myself and the little cublette dinner I decided it might be a nice idea to use up the bananas which are maybe 1 day away from being binned into cookies opposed to bread! Sometimes it’s nice to shake things up!
After just trialing one of them, with the cubs milk (again don’t like to waste things) I decided I needed to share the wealth!
It took less than 15 minutes to prep and around 20 minutes in oven at 350degreesF
Ingredients:
- 6 tablespoons of unsalted butter softened
- 1/2 cup of white sugar
- 1/3 cup of brown sugar
- 1 large egg
- 1/2 teaspoon of vanilla extract
- sprinkle of cinnamon
- 1/2 cup of instant oats
- 1 cup of flour
- 1/2 teaspoon of salt
- 1 teaspoon of baking powder
- 1 cup of walnuts
Step 1:
I’m making an assumption you have already turned on the oven to 350degrees F and it’s now ready…!
Step 2:
Beat the butter and sugars until smooth. Mix in the egg and vanilla extract and the sprinkle of cinnamon. Chop up the bananas and throw them in!
Step 3:
Throw everything else in; oats, salt, baking powder and flour
Step 4:
Spoon the dough at a good heathy distance away from each cookies on parchment lined cookie sheets
Step 5:
bake until light brown, approx. 20 minutes.
Now it’s time to enjoy…
